About the pit

Meat on the Street started the way most good BBQ stories start — with a backyard smoker, way too much brisket for one family, and neighbours who kept turning up right on time. What began as weekend cook-ups for mates turned into a trailer, a proper offset smoker, and a regular spot on Melbourne's market and laneway circuit.

We still cook the same way we did in that backyard: real hardwood, no shortcuts, no gas-assist. Briskets go on before sunrise and come off when they're ready, not when the clock says so.

Our mission

Delicious food without the nasties. No unnecessary toxic oils. No additives. And most importantly — no fucking numbers. They're toxic and unnecessary.

Every rub, sauce, and ingredient is sourced locally. If something we'd otherwise buy comes with a number or a bad oil in it, we make it ourselves instead.

Project Zero Waste

Waste is inevitable in food service — we just don't treat it as something to write off and forget. Any leftover food is logged as a business loss and given to people who need a hot meal, not thrown out. The only thing that goes in the bin is anything genuinely unsafe to eat, which is minimal.

Pay It Forward Board

Backyard Smoked Brisket

Our house method for a full packer brisket — salt, pepper, patience.

Ingredients

  • 1 whole beef brisket (4–5kg), untrimmed
  • 3 tbsp coarse salt
  • 3 tbsp coarse black pepper
  • 1 tbsp garlic powder
  • Red gum or ironbark for smoking

Method

  1. Trim fat cap to roughly 5mm, leaving an even layer.
  2. Season generously on all sides and rest uncovered in the fridge for 4+ hours.
  3. Bring smoker to a steady 110–120°C using indirect heat.
  4. Smoke fat-side up, undisturbed, for 6–8 hours until bark is set.
  5. Wrap in butcher paper once internal temp hits ~68°C.
  6. Continue until internal temp reaches 95–96°C and it probes like soft butter.
  7. Rest wrapped in an esky for at least 1 hour before slicing against the grain.

House Pulled Pork

Pork shoulder rubbed and smoked until it falls apart with two forks.

Ingredients

  • 1 pork shoulder (bone-in), ~3.5kg
  • 2 tbsp yellow mustard (as a binder)
  • House rub: brown sugar, smoked paprika, salt, pepper, garlic & onion powder
  • Apple cider vinegar spritz

Method

  1. Coat the shoulder in mustard, then pack on the rub evenly.
  2. Smoke at 120°C, spritzing with cider vinegar every hour after the first 3 hours.
  3. Once bark is dark and set (~internal 70°C), wrap in foil or butcher paper.
  4. Continue cooking until internal temp reaches 95°C.
  5. Rest 45 minutes, then pull apart by hand, discarding excess fat.

Burnt Ends

The market favourite — twice-smoked, sauce-glazed brisket point cubes.

Ingredients

  • Brisket point from a cooked brisket, cubed 2.5cm
  • ½ cup house BBQ sauce
  • 2 tbsp brown sugar
  • 1 tbsp rub

Method

  1. Cube the rested brisket point and toss with extra rub.
  2. Spread in a foil tray, back onto the smoker at 135°C.
  3. Smoke uncovered for 1 hour to firm up the bark.
  4. Toss through sauce and brown sugar, return for 30–45 minutes until sticky.
